Week 46: Cookie Dough Cupcakes with Chocolate Buttercream Frosting

These are really Happy Birthday, Chris cupcakes...if you live in Pittsburgh, PA, and you see Chris on Wednesday, tell him Happy Birthday! He's a great guy (very cute) with a beautiful wife...Steffi...and two adorable little girls, Samantha and Alyson. Anywayz, HB Chris!

Okay...what makes these cupcakes extra special is that there's cookie dough in the middle! They are from the Cupcakes from the Cakemix Doctor book. Here's what's cool...you actually put some frozen chocolate chip cookie dough on top of each cupcake just before you put them in the oven. The chocolate buttercream is to die for...light and fluffy and very chocolate!

    They sound fabulous! I just joined weight watchers so I really shouldn't have them in my house . .But maybe I'll bake them for our church's monthly potluck so that I can try one!

    I could eat one or two for you. Really. It's the least I could do for a fellow CQ-ophile.

    I tell you what, though, I'd have to do it with a tall glass of milk and some free time. Those babies were rich and tooth-achy sweet and dense. Needed a moment alone after munching happily on the one I snagged.

    Just discovered your blog.....gorgeous stuff....i was searching for a cupcake recipe online i can make a day or two in advance to make a cupcake tower in place of a wedding cake.... love the lemon meringue ones from a couple of months back - do you think they would last a day or two? I was looking for something lemon and raspberry... any ideas?

    The lemon meringue cupcakes would probably last only 2 days...because of the meringue. But one day out should be no problem. I usually make mine on Sundays and bring them to work the next day and they've always been fine. And they would look awesome in a cupcake tower...and they tasted so good. I haven't done any raspberry, so I can't help you out there.

    CQ, just checking in to report that I saw a new book today, "500 Cupcakes: The Only Cupcake Compendium You'll Ever Need." It's small but thick and cute with lots of photos. It would make a good gift. However, there aren't technically 500 cupcake recipes as some of them actually are muffin recipes. (And we know muffins aren't cupcakes!)
